I've been guilty of that sort of writing to a certain extent, simply because I like to write stories where the gal gets in over her head, but ends up liking it.
Writing "realistic" stories (where the gal hates it throughout, or loves it from the start) are much more difficult. Simple as that. I've done one of each, and they were both very sticky to work out how the characters worked.
It's like asking "why are Hollywood films so generic?" - it's because it's easier!
